You have to go back to 1815 to find the first Vivalda at the helm of this typical Italian restaurant whose reputation has been handed down from generation to generation for more than 200 years. As a result of the merger of La Cabro d’Or and L’Oustau de Baumanière, Baumanière has become the epitome of Mediterranean art of living in a magical place. Appreciated by personalities from the political and the media world, this domain was founded by Raymond Thuillier, the "historical monument" of French gastronomy according to Gault et Millau. In 1969, Jean-André Charial took over from his grandfather as the head Chef, a position he held with maestria until today. This respected Chef is now no longer in the kitchens but managing the domaine.  Baumanière remains a unique place, nestled in the Baux-de-Provence rocky outcrops. It encompasses five buildings surrounded by Mediterranean gardens: the L’Oustau, the historical main house, La Maison de Famille, a Provençal farmhouse, the 18th-century manor, and finally Carita and Flora, two country abodes. There are also two gourmet restaurants, the Oustau de Baumanière—an institution where you can appreciate the refined, subtle, and creative cuisine of the chef—and La Cabro d'Or, a Provencal restaurant. The estate also has a spa, three outdoor pools, and a tennis court.

L'Oustau de Baumanière

Situated on the beach of Praia da Rocha in this sunny region in the south of Portugal, a 19th century family house overlooking the ocean became the first hotel in the Algarve In 1934. By taking over Belcanto in 2012, chef José Avillez has opened a new chapter in the history of this award-winning restaurant that has been installed in the romantic neighbourhood of Chiado since 1958. Its complete renovation did not disappoint. Amid its sober and sophisticated decor, the restaurant provides guests with a highly exclusive experience. Diverse and creative, the cuisine revisits Portuguese gastronomy through a continuous study that deals as much with flavours as it does textures. Belcanto

An hour and a half from Amsterdam, twenty minutes by boat from Den Helder — between the land and the sea — lies Texel, an island in the Frisian archipelago. It is where chef Jef Schuur, hand in hand with his wife Nadine Mögling, has chosen to open a Michelinstarred restaurant and several beautiful modern suites in what was once a presbytery. With the changing tides, he cooks local products such as Wadden Sea cockles with Texel lamb bacon, parsley root cream and a jus of puffed celery. Legend has it that Jean Cocteau designed the staircase of the Château de Courcelles... La Table de Courcelles

Once home to a large family of Provençal humanists, Château de Fonscolombe has preserved its soul. Its salons of Genoa leather and Chinese wallpaper still resonate with their lively character. The park, with paths lined by majestic trees, is the fantastic oeuvre of a lineage of botanists. As for the restaurant La Table de l'Orangerie, it too has embraced the chic, rustic and Provençal charm of the estate. La Table de L’Orangerie

The towers of this château are so close to the river that it feels as if they are floating on it. Il Luogo Aimo e Nadia was opened more than 50 years ago by Aimo and Nadia, partners in life and work, and is famous for both its cuisine and for its setting, an artistic and architectural project with Paolo Ferrari, in which performances combine culinary art, theatre and fine art. Their daughter Stefania is now at the helm of Il Luogo, alongside the Chefs Fabio Pisani and Alessandro Negrini, who produce a creative cuisine: their style reveals unsuspected flavours. Their dishes are the fruit of both traditional and contemporary techniques, and give perfect expression to the complex culinary heritage bequeathed by the culture and nature of Italy.

This hotel is the dream child of Carlino Cinque, who was passionately in love with this place and commissioned a villa on a promontory with breathtaking views of Praiano, Positano, the coast and the rocks of Capri. In the course of time, this dream grew, as did the hotel. Its many rooms have each a private terrace and a wonderful sea view. The interior details include fine terracotta floors with ceramic decoration and doors adorned with frescoes. Young chef Ryan Ratino, seen in the United States as a rising star of American-style cuisine, opened the Jônt Restaurant just minutes from the White House, in a neighborhood of Victorian buildings and art galleries. On the first floor, the open kitchen lets diners watch the team of chefs work in perfect tandem to create a refined meal to the sounds of a hip-hop-inspired playlist. Having acquired considerable technical mastery, the chef is easy-going as he plies his trade. The inspiration he finds in Japanese cuisine is expressed in the simple, perfectly selected ingredients.
