As a result of the merger of La Cabro d’Or and L’Oustau de Baumanière, Baumanière has become the epitome of Mediterranean art of living in a magical place. Appreciated by personalities from the political and the media world, this domain was founded by Raymond Thuillier, the "historical monument" of French gastronomy according to Gault et Millau. In 1969, Jean-André Charial took over from his grandfather as the head Chef, a position he held with maestria until today. This respected Chef is now no longer in the kitchens but managing the domaine.  Baumanière remains a unique place, nestled in the Baux-de-Provence rocky outcrops. It encompasses five buildings surrounded by Mediterranean gardens: the L’Oustau, the historical main house, La Maison de Famille, a Provençal farmhouse, the 18th-century manor, and finally Carita and Flora, two country abodes. In this acclaimed traditional Ryotei restaurant on the outskirts of Osaka, Japan’s landmark city, Kashiwaya Osaka Senriyama offers modern Japanese food in a dining room designed in the “Sukiya” style, Japan’s traditional format for tea ceremonies: Fusuma sliding doors, shoji paper screens, tatami mats and Tokonoma reception rooms, each executed in a contemporary style. The menu is limited to just eight dishes, which are changed every month. The specialities of the famous Chef Hideaki Matsuo include Amadai, a dish made with grilled tile fish marinated in a salt shrimp “shiokara” dip, and puffer roe boiled in sake, floating on a turnip soup.

La Grenouillère, originally a typical regional family restaurant, has become under the amazing starred Chef Alexandre Gauthier, one of France's most inventive chefs, a place which is definitely out of the ordinary. The century-old buildings have been preserved, but two sleek new metallic marquees by architect Patrick Bouchain have redesigned the property. The restaurant, which now opens out onto the garden and greenery, serves a radical cuisine, one that is rooted in the local area and uses freely and imaginatively ingredients from the sea and from hunting and gathering. You can extend your sensory experience by staying in one of the huts in the garden.

La Grenouillère

A discreet white property with blue shutters, typical of the Vendée region, is home to La Marine, the restaurant of Céline and Alexandre Couillon. This property, located directly on the small port of Herbaudière, at the north-west tip of the island of Noirmoutier, has become something of a mecca for gastronomy. From his parents, the chef not only inherited a restaurant, but also their passion for the sea (his father was a shrimp fisherman) along with strong values of hospitality and respect for produce. He runs the establishment with his wife Céline, as Maître de Maison. For his bistro-inspired menu, Chef Couillon selects only the finest seafood cultivated sustainably. Even vegetables come from his own kitchen garden. Guests wishing to stay the night will appreciate Maison Moizeau which adjoins the restaurant–its rooms feature bright marine-inspired décor, polished parquet floors, white walls and natural materials, and open their windows onto the port and its boats.

La Marine

Far away from the hustle and bustle of the world, you can enjoy at La Torre del Visco the glorious scenery of a valley untouched by man and the modern world. The estate house with its tower dating from 1449 is surrounded by its own eighty-nine hectare farm, romantic gardens full of roses and olive trees bordered by the river Tastavins and the mountain range known as “Ports de Beseit”. The owner grows her own organic fruit and vegetables and makes her own olive oil for the restaurant. Inside the beautiful labyrinthine buildings, immerse yourself in a novel by the fireside, play chess or piano. During the night you can observe the stars on the terrace.

The Château de Beaulieu is an architectural gem with elegant facades and interiors in a romantic park, one hour from Le Touquet, between the Opal Coast and Belgium. The Chef pays tribute to Pas-de-Calais producers by using ingredients like Boulogne-sur-Mer scallops, Étaples bass and other fish from the North Sea. With a panorama open to the horizons of the Valleys of Ardèche and Mont du Velay, father and son Chefs Régis and Jacques Marcon’s new hotel has “Ecolabel” approval. The décor is minimalist and there are plenty of spots from which to admire the surrounding mountains. Enjoy natural swimming in the pure water of the pool. The restaurant is dedicated to seasonal gastronomy. The walls of a 500-year-old flour mill are home today to a delightful family hotel where you can enjoy total peace troubled only by birdsong and the sound of the brook rippling through the grounds. This same creative freedom is expressed by the ever-evolving cuisine, which finds its roots in the riches of Auvergne. A native of the region, Serge Vieira passionately works to blend the flavours and textures of the products he knows so well. And as he once wished to be a designer, he puts great effort into the composition of his dishes. Working closely with fellow chef Ara Jo, Keller and his team serve minimalist cuisine using products like oysters and truffles in “sequenced meals”: in order to maximize surprises, no single ingredient is ever repeated in a meal. Two tasting menus are offered daily, flavored with fresh herbs and vegetables cultivated in the kitchen garden.

This fine early 20th-century mansion on the banks of Lake Annecy is a rhapsody of blue and gold: the blue of the façade and the lake viewed from the terrace meets the golden yellow of the wood cladding the walls and the sun that shines into the guestrooms through the large picture windows. This house offers an intimate setting with a warm, cosy ambiance. And all around is resplendent nature, as celebrated by the Chef's cuisine. Since 2010, Yoann Conte, following in the footsteps of Marc Veyrat, has drawn his inspiration from the passing seasons and their plants to reinterpret local cuisine, serving, for example, fish from the lake with fresh herbs and alpine flowers.
